A tried and true vegetarian side dish, easy to make and eggplant-skeptic friendly.
Fun fact: The eggplant is botanically classified as a berry!
Ingredients
Equipment
We need:
- A large sheet pan (a.k.a. baking tray, baking sheet, or baking pan)
- A brush
- A bowl
Eggplants
- two medium size eggplants
Paint
- 1/4 cup Olive oil (~60 ml)
- 2 tablespoons Soy sauce
- 1 tablespoon Granulate garlic
- 1 teaspoon Paprika (optional)
Preparation
- Heat the oven to 400 °F (~200 °C)
Eggplant
- Cut off the stem portion from the top of the fruit
- Slice the eggplant length-wise into 1/4 inch slabs (0.625 cm)
- Lay the slices with space in between them on the sheet pan
Art
- Mix the paint in a bowl
- With a brush, coat the eggplant with a generous layer
- Flip the pieces and paint the other side
Bake
- Put in the oven for 25 minutes
- It’s ready when the glaze is golden brown, and the eggplant is soft
